Raw Meat & Raw Liver ('Ancestral' Eating)
Liver is genuinely nutrient-dense. Eating it raw adds no benefit and adds Toxoplasma, Salmonella, E. coli and, in wild game, a real parasite load.

Mechanism
Cooking denatures some heat-labile vitamins but leaves the relevant ones — retinol, B12, iron, copper — essentially intact. There is no nutrient whose bioavailability is meaningfully improved by eating beef raw.

The full read
The nutrition half is fine: 100 g of beef liver is one of the densest sources of preformed vitamin A, B12 and copper available, and all of that survives a pan. The raw half is a costume. It buys you nothing measurable and imports foodborne infection, with toxoplasmosis and hepatitis E both documented from raw liver specifically. It also stacks a second risk the trend never mentions: sustained high-dose preformed retinol is hepatotoxic and teratogenic, and daily liver in quantity gets you there. Eat it cooked, a couple of times a week, and skip the mythology.
